While visiting my parents, I decided to invite my sister’s little girls over to bake. Pictured above is my niece Olivia Lilly. Isn’t she adorable? She is just so charming and precocious, I love her! When the cupcakes were finished, I asked Olivia if she would let me take pictures of her. She jumped at the opportunity to pose for photos and was excited when she realized that her shirt matched the color of the frosting! She was such a good sport that I told her that she could have an extra cupcake and she was thrilled.
The recipe I used for delicious raspberry cupcakes and raspberry frosting is from Candace Nelson of Sprinkles Cupcakes. The actual recipe is for strawberry cupcakes but my parents had fresh, ripe raspberries in their backyard that were practically begging to be used, so I used raspberries in place of strawberries. I, as well as my nieces, loved the combination of the dense cake and the light, fruity frosting. I need one of my friends to get married or have a baby so I can throw a shower for them and share these little delights!
