White Chocolate-Apricot Muffins

After making these, I have a whole new appreciation for muffins. Usually when I’m deciding on a sweet treat to bake, a batch of cupcakes always trumps muffins. However, I came across this recipe and decided to give them a try and I’m very glad that I did! They were easy to make and had just the right amount of sweetness in them. The dough is not overly sweet which lets the flavor of the bits of white chocolate and fruit stand out. The recipe calls for apricot preserves but I tried a batch with my mom’s homemade black currant jelly as well and they both turned out equally delicious. The next time I have a chance to host a get-together I am definitely serving these sweet and petite muffins.
