Tis the season for pumpkin spice EVERYTHING!!! Yep, I’m one of those girls that is a sucker for anything ‘pumpkin’ this time of year and I’m not ashamed of it. Yum! Yum! Yum! I was elated when I came across this recipe from Martha Stewart for Pumpkin Butter and decided to give it a try. It is made with a Sugar Pie Pumpkin but you can substitute canned pumpkin. I decided to be brave and use the real pumpkin and I’m so glad I did! Shawn was on a business trip in Asia so I headed over to my mom’s home to bake with her and we had quite the merry time. I just love baking this time of year, don’t you?

Also, in a separate pot, we stirred together 1 cup of brown sugar, 2 tsp pumpkin spice seasoning, and 1/4 cup of apple juice and simmered it on low heat until it made a thick sauce (about 3-5 minutes), stirring constantly. We then slowly wished it into the pumpkin butter to add a bit more spice and sweetness.
